Tuna and Avocado Salad
Ingredients:
- 1 can tuna, drained
- 1 avocado, diced
- 1/4 red onion, diced
- 1 tbsp olive oil
- 1 tbsp lemon juice
- Salt and pepper to taste
Instructions:
- In a bowl, combine the tuna, avocado, and red onion.
- Add the olive oil, lemon juice, salt, and pepper and mix well.

Spinach and Feta Stuffed Chicken Breasts
Ingredients:
- 4 boneless, skinless chicken breasts
- 1 cup fresh spinach, chopped
- 1/2 cup crumbled feta cheese
- 1/2 tsp garlic powder
- 1/2 tsp dried oregano
- Salt and pepper to taste
Instructions:
- Preheat oven to 375°F.
- Cut a slit in the thickest part of each chicken breast to create a pocket.
- In a bowl, mix together the spinach, feta cheese, garlic powder, oregano, and salt and pepper.
- Divide the mixture evenly among the chicken breasts, stuffing it inside the pockets.
- Place the chicken breasts in a baking dish and bake for 25-30 minutes or until cooked through.
- Serve and enjoy!
