Alright, now that we've had a good laugh, let's get into the recipe. I'm sharing with you all my favorite avocado and egg breakfast bowl that is delicious and super healthy. Here's what you'll need:
- 1 avocado
- 2 eggs
- Handful of spinach
- Feta cheese
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions:
- Cut the avocado in half and remove the pit.
- Crack an egg in each half of the avocado.
- Place the avocado halves in a baking dish and bake at 400°F for 10-15 minutes, depending on how runny you like your eggs.
- In a separate pan, heat up the olive oil and sauté the spinach until wilted.
- Once the eggs are cooked, remove from the oven and top with wilted spinach, feta cheese, and salt and pepper to taste.
