Ingredients
- Chicken Breasts – 2
- Lime Juice – 2 Tbsp
- Olive Oil – 2 Tbsp
- Cumin – 1 Tsp
- Garlic Powder – 1 Tsp
- Chili Powder – 1 Tsp
- Salt – 1 Tsp
- Pepper – 1 Tsp
- Green Onions – 4 stalks, thinly sliced
- Cilantro – 1 handful, chopped
- Red Pepper – 1, sliced
- Green Pepper – 1, sliced
- Yellow Onion – 1, sliced
Instructions
- Preheat oven to 375°F (190°C). Line a baking dish with foil and spray with cooking spray.
- In a small bowl, whisk together lime juice, olive oil, cumin, garlic powder, chili powder, salt, and pepper.
- Place chicken breasts in the prepared dish and pour the spice mixture over them.
- Add the green onions, cilantro, red pepper, green pepper, and yellow onion to the dish.
- Toss everything together, making sure the chicken is coated in the spice mixture and vegetables are evenly spread.
- Bake for 30-40 minutes, until the chicken is cooked through and the vegetables are tender.
- Remove from the oven, let it cool for a few minutes and serve.
